Those healthy-scratch players still play in the sim. Since they don't have game update stats, they get a default update. How that ends up usually depends upon their role on the team. We've had some sim teams that rode a backup-QB with default updates all year into playoff success. If it's a RB1, they'll still get their share of carries with default average, depending upon the stats of the other RBs and how many real carries are in their updates. We've had RB1s with no game stats get a ton of carries in the sim under the right conditions (like team ahead so running a lot and no other RBs with stats either). Default updates tend to be fairly mediocre (but better for higher graded QB for example), but game situations and grade advantages can make them strong performances in the right circumstances if default %s and averages go way up because of grades.

For non-skill position players like lineman, their biggest contribution to game results are their grades, so they still have that same impact here whether they sat or played in reality while healthy.

In the case of my FFFL Steelers will Jones start the game for me or will Roethlisberger with a default update since that is my depth chart?

I think whoever you had at the top of your depth chart should be starting. If that's Roethlisberger, then you'll get the default update.

Yes. In some cases, the sim coach may switch QBs at halftime, though, too. That's part of the programming in part to prevent intentional tanking or less active players not updating depth charts.

If Big Ben is the depth chart starter, he'll start the sim game with a default update (at a higher grade QB level). If his sim team was way behind at half and good QB stats sitting on the bench the sim coach may swap in the backup QB with stats under the right conditions. But a highly graded QB has a pretty decent default update and grade advantages (if applicable) can push up the completion percentage by up to +15% if strong advantages.
